Heat the oil and mix it in the flour to make a dough. Add salt , ajwain and water and prepare a tight dough and keep it aside.

For the filling , heat oil in the pan and add ginger, coriander powder and red chilli powder. Now add the boiled potatoes and peas and let it cook for twenty minutes on slow flame. You can also add raisins and cashews in the mixture.

Make balls from the dough depending on the size of samosas needed. If you want a small samosa, make a small ball and a slightly bigger ball for a bigger samosa.

Now fold it into a cone shape and add the filling in the centre. Now wet the circumference of the cone with water using your finger tips for sticking. You can also get a samosa shaper available in the market.

Now heat the oil and deep fry them till they turn light brown in colour.

The samosas are ready. Serve it hot with chutney.

Tip: You can use any leftover paneer or aloo sabzi as filling.
