Hot or cold, desserts can turn an average meal into a memorable one. As Navratri is going on and we can’t eat eggs so Team AAW brings to you some easy no bake and egg free dessert recipes which are easy to make and nutritious too.

 

Rose & Fig Bites
Rose & Fig Bites

A fig is a fruit that is native to the Middle East, but Indians value it immensely for its nutritional value. Figs are available round the year though they are best from May to November. Did you know that the Bodhi tree, the tree under which Buddha achieved enlightenment was an old sacred fig tree?
Preparation time: 1 hour
Cooling time: 1-2 hours

Ingredients

Dried figs: 500 grams
Pistachios, broken :100 grams
Almond powder: 100 grams
Butter: 50 grams
Dried rose petals : 20 grams
Castor Sugar: 100 grams
Water: 100ml

Method
1. Boil the figs with water and sugar until soft paste-ish texture. Now add the butter.
2.Add in pistachios , almond powder and rose petals to this buttery-paste.
3. Now remove from heat and spread on a tray greased and lined with paper or preferably a silicon mat.
4. Cool for about thirty minutes and refrigerate for another thirty minutes till firm.
5. Cut into square bites and serve.

2. Coconut Panacotta

This set pudding is inspired by the Elaneer payasam (Tender Coconut Payasam), a very simple and quick to make dessert from South India. The bits of the tender coconut pieces along with the blend of evaporated milk and coconut milk makes this dish really delicious.
Preparation Time: 1 hour
Cooling time: 1-2 hours
Ingredients
Milk: 200 ml
Heavy cream: 400 ml
Vanilla essence: 5 drops
Dried coconut powder: 75 grams
Sugar:100 grams
Agar gel:  60 grams
Method:
1. Combine the milk with sugar and bring to a boil. Now remove from flame and add vanilla essence and stir well.
2. Now add agar gel powder, followed by heavy cream and coconut powder. Stir well.
2. Set in desired glasses or cups and top up with nuts and fruit to serve.
