Gujarati Fajita Curry
1/4 cup fresh mango pulp along with seed
1 cup curd
2 tbsp gram flour(besan)
1 tsp ginger-green chilli paste
A pinch of turmeric
1 cube jaggery
Salt to taste
For tempering (chhonk)
2 pieces Cinnamon
2 to 3 clove
1 tbsp oil
1 spoon rai for tempering
1 spoon cumin seeds for tempering
2 or 3 small whole red chillies
A pinch of asafoetida(Heeng)
A couple of curry leaves
Heat the oil in a pan. Add the rai seeds and cumin and when they crackle, add the red chillies,
asafoetida, curry leaves ,cinnamon and cloves.
Now add the curd,mango pulp with seed & besan and simmer for 15 minutes, while stirring occasionally.
Add turmeric, salt & jaggery and give it a boil. Serve hot, garnish with coriander leaves
1 kg home made paneer
2 Alphonso mangoes
½ cup powdered Sugar
Pista , Almonds, Kesar & Elaichi for decoration
Knead the powdered sugar along with homemade paneer until smooth & fluffy.
Layer half of this in a pie dish. Put chopped mangoes as a second layer & top it with the paneer mixture.
Garnish it with almonds, pista , kesar , elaichi & set it in the fridge for ½ hour. Once set, cut into squares & serve cold.
