Kuttu atta and Cucumber Pancakes with Honey

Ingredients

Kuttu ka atta:                                     500 gm

Cucumber peeled and grated:   500 gm

Milk:                                                      400 ml

Butter:                                                  50 gm

Baking powder:                                                10 gm

Honey:                                                 100 ml

 

Recipe

step1. Mix the kuttu atta, milk and baking powder in a bowl with whisk.

step2. Give the rest to mixture for 30 min.

step3. Heat a non stick pan add butter and pour a ladle of mixture and cook slowly four 2 min both side.

step3. Serve hot with the honey.

Makes for 4.

Yogurt with Fruits

Pears:                                                   1 no

Banana ripe:                                       1 no

Apple:                                               1 no

Dragon Fruit:                                      100 gm

Orange:                                                1 no

Kiwi:                                                      1 no

Water melon:                                    100 gm (without seed)

Pine apple peeled:                          100 gm

Plain yogurt:                                       120 gm

Note: Any seasonal fruits can be used and cut into fancy shapes as required.

Mix all.

Ingredients

Red skin potato:                               800 gm

Zucchini:                                              300 gm

Yellow squash:                                  300 gm

Clarified butter:                                100 ml

Nutmeg grated:                                a pinch

Salt and white pepper powder to taste

Recipe

step1. Grate the peel potatoes, zucchini and yellow squash and add pinch of salt and give the rest for 10 min.

step2. Squeeze the mixture and take out maximum of the water.

step3. Add grated nutmeg into the mixture and make round shape cake.

step4. Heat non stick pan adds butter and cook the mixture from both side till it becomes golden in colour. Serve hot with the sauce.

For the Sauce:

Mix fresh yogurt and blanched spinach puree and season it.

 

Fresh Fruit Brochette with orange and ginger sauce

Ingredients

Pineapple peeled:                           100 gm

Watermelon:                                     100 gm

Dragon fruit:                                      100 gm

Papaya:                                                100 gm

Any other seasonal fruit can be chosen.

For sauce:

Freshly squeezed orange:            5 oranges

Ginger:                                                                 50 gm

Sugar granulated:                            50 gm

Cinnamon stick:                                1 no

Recipe

step1. Cut all the fruits into dice shape and make the skewers.

step2. Mix the orange juice and chopped ginger with a pinch of cinnamon powder and sugar.

step3. pour the sauce on fruit skewer and serve cold.
