Adam Gilchrist’s recipe: Pan-seared John Dory with pesto

What happens when luxurious TV meets food meets cricket? Well when the host of the new Australian travel and food show called ‘Taste Down under’ Chef Vicky Ratnani was joined by the famous Aussie wicket-keeper and batsman Adam Gilchrist. This was showcased on India’s first international food and lifestyle channel called the Living Foodz. It was also in association of Tourism Australia. Chef Vicky decided to cook Adam’s favourite dish and give us the recipe! Here is the recipe of Pan-Seared John Dory with pesto, micro greens and beets:

The Recipe:

Ingridients:

John Dory fillet 180g

Salt, pepper

Lemon juice 1 tsp

Olive oil 1 tbsp

Parsley 1 tsp

Marinate the fish with the above

For the pesto:

Macadamia nuts 1 cup

Coriander fresh 1/2 cup

Green chillies 1

Garlic

Ginger

Olive oil

Lemon juice

Blend the above to a smooth paste

For the Salad:

Baby beets- pickled

Micro greens

Cherry tomatoes

Black olives

Olive oil

Toss the above together and serve with the seared fish.

“Taste Down Under” is a show that takes its viewers a visual tour of Chef Vicky experiencing best of Australia. He is seen taking surfing lessons, meet a koala, take a hot air balloon ride, and enjoy the Melbourne cricket ground. The Chef said that he realized Australia is as crazy about cricket as India. This gave him the inspiration of recreating this recipe.
