Prepare some easy delightful delicacies such as layered corn rice and Russian salad to steal your mom’s heart this Mother’s Day.

Russian Salad

Ingredients

• 100 gms french beans
• 100 gms carrot
• 100 gms green peas
• 225 gms potatoes
• 1 small can (450 grams) pineapple slices
• 2 apples
• 100 gms fresh cream
• 1 cup Cremica mayonnaise
• 1 boiled beetroot
• 1 head lettuce
• Salt to taste
• Sugar to taste
• Freshly ground black pepper powder to taste

Procedure

• Cut the vegetables into small pieces and boil.
• Chop the pineapples and apples.
• Mix the fruits and vegetables, and add salt and pepper.
• Mix the mayonnaise and cream.
• Mix this mayonnaise thoroughly with vegetables. Add salt, pepper and sugar.
• Line a salad bowl with salad leaves. Pile the salad in the centre.
• Decorates with slices of beetroot.
• Serve cold.

Layered Corn Rice

Ingredients

• 2 cups plain cooked rice
• 1 cup loosely packed boiled chopped spinach
• 1 cup Cremica Veg. Mayo
• 2 tomatoes peeled and chopped
• 10/12 mushrooms
• 1 onion finely chopped
• 3 to 4 garlic pods chopped
• 1/2 cup Cremica Pizza Pasta sauce
• 1 small tin corn nibblets.
• 3/4 tsp butter
• 1 tbsp sugar
• Salt pepper to taste.
• 6/8 basil leaves for decoration.

Procedure
• Use half the butter and saute onions, chillies, spinach, corn and boiled rice. Add salt if needed, and keep aside.
• Use rest of the butter and saute, garlic chopped tomatoes, Pizza Pasta Sauce, add sugar, and salt. Keep aside.
• Add plain cooked mushrooms chopped to Cremica Mayonnaise.
• Check salt pepper to taste, and add 1 green chillies de seeded if spicy mix is required.
• In a deep glass baking dish layer rice, alternately layer rice with tomatoes Pizza Pasta sauce mixture and mushroom Mayo mix.
• Decorate with rings of capsicum and chopped olives.
• Basil leaves, bake covered with foil for 1/2 an hour. Serve hot.
