Recipe: Kaju Katli

Kaju Katli

Kaju Katli or kaju barfi is easy to make and better than the adulterated market versions. Here is how to make this yummy traditional Indian sweet:

Ingredients:

  • 1 cup cashewnuts (kajus)
  • 1 cup chasni (recipe below)
  • 1/4 tsp. elaichi powder
  • Some strands of saffron

Method

For chasni:

Bring to boil ¼ th cup water and add 2 cups of sugar while boiling and stirring continuously.

Add some drops of kewra essence (2-3 should suffice) and keep this mixture hot. (Do not cool)

For Kaju Katli:

  • Grind kaju to make a fine powder.
  • Place a large bowl on medium heat and add the kaju powder, elaichi powder and the hot chasni, mix thoroughly.
  • Ensure the chasni you use is hot.
  • Close the gas and keep mixing till kaju absorbs all the syrup.
  • Roll the kaju chasni mixture on a butter or parchment paper and make a ¼ inch thick layer.
  • Cut into diagonal or square shape.

Decorate with a stand of saffron or chandi virk.

PS: Be very careful as hot chasni can lead to serious burns.
