Forget the aata and suji halwa and try something different this festive season. Team AAW brings to you a scrumptious halwa prepared with rajgira flour . The halwa is cooked in pure ghee , milk, sweetened with sugar and simply melts in mouth. Tempted?

Serves-04

Ingredients

Full Cream Milk : 02 cups
Granulated Sugar: 05 tbsp.
Clarified butter: 04 tbsp.
Rajgira Flour (Amaranth Flour) : 01 cup
Fresh Green Cardamom Powder: ½ tsp
Almonds, slivered and sautéed:  08 nos.
Cashew nuts, sautéed : 08 nos.
Raisins, sautéed till it puffs: 12 nos.

Method:

In a heavy bottomed pan add milk and let it boil, add sugar and let it dissolve completely. Now turn off  the flame.
Now heat clarified butter in a non-stick pan add Rajgira flour,cook on a medium flame until light brown, keep stirring in order to prevent it from burning. Once the raw aroma of the flour disappears and it starts giving toasted nutty aroma , set aside from the flame add milk and stir vigorously to avoid lumps.

Keep stirring add the sautéed nuts reserving some for garnish. Add cardamom powder, cook the halwa till all the milk is absorbed and the clarified butter starts oozing out of the pan.

Serve hot garnished with nuts.
